1 cup orange and/or lemon juice for each 2 lbs. of meat
Salt and pepper to taste
Optional: canned chipotle chiles in their juice (can be put in blender with citrus juice)
Place pork loin in large oven-proof pot with lid. Pour liquids over the meat and season with salt and pepper. Cook in oven, basting with juices every 1/2 hour until meat is cooked throughout - it should easily shred with a fork.
While pork loin is cooking, prepare these side dishes:
Baked or mashed potatoes (yams or sweet potatoes can also be used)
Steamed vegetables such as broccoli, zucchini, cauliflower, etc.
