- 2 lbs Northgate® pineapple flavored tamale masa
- 30 tamale husks, softened
- 2 lbs fresh pineapple, chopped
- ½ lb sugar
- 3 oz grated coconut
- 3 oz raisins
- Cook the pineapple in water with the sugar until it softens. Drain. Mix in a bowl with the coconut and the raisins.
- Place the husks, pineapple masa and pineapple mix on a working surface. Spread ¼” to ½” of masa across the corn husk. Add a spoonful of pineapple mix in the center of the masa.
