- 1 Bunch of Kale, washed and dried
- 3 tablespoons of Olive Oil
- 2 Cloves of Garlic, Mashed
- 1 tablespoon of Lemon Juice
- 3 Oz. of Cotija Cheese, crumbled
- Remove stems from kale, stack and roll cigar-style, then thinly slice. In a small jar shake garlic, lemon juice and olive oil to make dressing. Pour over kale and toss well. Add cheese, salt and pepper. Let rest 15 minutes before resting.
