Chicken Fajitas


You'll find all ingredients at Northgate stores.

  • 3 bell peppers (green, yellow, red)
  • 1 onion
  • 1 cup fresh sliced mushrooms (optional)
  • 2 cups shredded, cooked chicken meat
  • 1 cup fresh or processed pico de gallo
  • Salt and pepper to taste
  • Flour tortillas
  • Toppings (optional): shredded cheese, sour cream, shredded cabbage or lettuce, avocado slices
  •   Chicken Fajitas

    Cut peppers and onion into long, thin slices. Saut← in a small amount of oil until tender. Add mushrooms, chicken and pico de gallo and cook on low heat until heated through.

    Warm tortillas on griddle or stovetop and place in cloth napkin to keep warm. Serve stuffing mixture in bowl (or a heated cast iron pan to keep it warm) with toppings in separate bowls.

    Chimichurri

    This Argentine sauce is great with any meat, chicken or seafood, as a sauce or marinade

    • 2 to 10 cloves garlic, peeled, and chopped coarse
    • 1 or more red jalapeno, stemmed, seeded, chopped coarsely
    • 1/4 cup fresh oregano leaves
    • 1 cup fresh parsley leaves
    • 1/4 cup red wine vinegar
    • 1/2 cup olive oil
    • 1/4 teaspoon salt

      Chimichurri

    Chop solid ingredients finely (a food processor helps) and add to liquids. Refrigerate a few hours to allow flavors to meld before serving.

    Cream of Vegetable Soup

    This soup can be made with any vegetables you like. You can use milk instead of chicken broth; we suggest low-fat.

    • 1 lb. assorted vegetables: carrots, spinach, potatoes, celery, onion, broccoli
    • 1 large can chicken broth (or use homemade)
    • 2 Tbsp. margarine or vegetable oil (we recommend olive oil)
    • Salt and pepper to taste
    • ¼ cup flour (will thicken soup, optional)
    • Sour cream (optional)

      Cream of Vegetable Soup

    Cut up vegetables and cook in broth until tender. Cool somewhat then liquefy in blender with other ingredients. If you added the flour, return to pan and cook a few more minutes, stirring constantly. Serve hot with a dollop of sour cream on each serving.

    PICO DE GALLO SALSA


    You'll find all ingredients at Northgate stores.

  • 4 plum tomatoes, chopped
  • 1/2 cup finely chopped onion
  • 2 fresh chile peppers, mild or hot, seeded and finely chopped
  • 2 tablespoons chopped red or yellow bell pepper
  • 1 1/2 teaspoons finely chopped fresh cilantro
  • 1 teaspoon lime juice
  • Salt and pepper to taste

  •   PICO DE GALLO SALSA

    Combine ingredients in a glass or other non-reactive bowl and refrigerate for at least 30 minutes before serving. Makes about 2 cups.
