February is Heart Health Month. Viva La Salud reminds you that choosing healthier foods can help keep your heart healthy and strong. One thing you can do to eat healthier is to include fruits and vegetables with your foods. Fruits and vegetables contain fiber, a very important nutrient that helps control cholesterol, which in turn can help reduce the risk of developing heart disease.

It’s also important to include fruits and vegetables of different colors. Beets are vegetables with a very particular color. Besides having beets in juice, these lovely veggies can be prepared in different ways to serve as a side dish with your meals.

Roasted beets are not only delicious but also very easy to prepare. All you have to do is take a bunch of beets, scrub them, peel them, and cut the beets in wedges like you see in the picture. In a bowl, toss the beet wedges with 1 tablespoon of olive oil (or grapeseed oil), a little bit of salt and pepper. Spread the beets on a baking pan and place in a 450-degree oven for 25 to 30 minutes.
