RECIPE: FISH FILET ROLLS IN AN AZTEC CORN SAUCE
Are you looking for healthy recipes for lent? Try our delicious and nutritious recipe for Fish Filet Rolls in an Aztec Corn Sauce.As with the other Viva La Salud® recipes, Chef Pablo and I worked together to make food that would taste good and be good for you!  We've sampled this recipe in two stores and got really good responses.  Here are some of the healthy eating principles that apply to this recipe.
  • Choose lean proteins.

    This way, you can cut down on calories and help protect the heart. Fish, like the tilapia used in this recipe, are sources of lean protein.  The American Heart Association recommends eating fish at least two times per week.

  • Make half of your plate fruits and vegetables.

  • Switch to low-fat milk (1% milk fat) or non-fat.

    Our Aztec Corn Sauce is made with 1% milk and it’s thickened with plain masa from our Tortilleria. You could also use almond milk or soy milk for the sauce.

  • Reduce sodium in your foods.

    Seasoning the fish filet with paprika, pepper and granulated garlic gives flavor without having to add salt. We do add a small amount of salt to the sauce.

  • Opt for cooking methods that don’t require addition of too much fat.

    Our fish filet rolls are baked in the oven with a little bit of water added to the pan to create steam for the fish to cook.

Serve your fish filet rolls with a salad or try our brown rice recipe.Chef Pablo baked a fresh corn and jalapeno muffin to go with the fish and served it with a green organic salad (available in the Produce Department). Let us know what you thought of this or any other recipe!
