Chili peppers are native to Central and South America. Mild to spicy heat intensity is due to the chemical compound capsaicin, which in moderation may improve digestion. Add peppers to dishes for flavor and an addition of vitamins A and C!

Peppers are botanically a fruit, however, in the culinary world, people recognize peppers as a vegetable! There are nearly 2,000 varieties of peppers worldwide. They can be grouped into two categories: hot (chili) and sweet peppers. Smaller peppers are generally hotter and the heat is most intense when fully ripe. Peppers ripen into red, orange, yellow,purple, and even brown colors.

Also use rubber gloves for sensitive skin and never touch your eyes when handling them. If you go over your heat limit try cooling your palate with dairy foods. Capsaicin in chili peppers stimulates pain receptors in your mouth, and Casein- the main protein in milk- washes away the capsaicin.

Pico de Gallo Recipe
Ingredients:
  • (Makes 36 tastes at ¼ cup each)
  • 3 pounds ripe tomatoes, chopped
  • 4½ cups chopped onion
  • 1 cup chopped fresh cilantro
  • 3 small jalapeño peppers, seeds removed, chopped
  • 6 tablespoons lime juice
  • 6 cloves garlic, minced
  • ¾ teaspoon sea salt
Preparation:
  1. Combine all ingredients in a medium bowl.
  2. Spoon into cups.
