Chef Pablo Recommendation: Unlike other forms of cooking, grilling doesn't add fat to foods and so it's a great cooking method to take advantage of this summer!
Choose Healthier Protein such as:

  • lean cuts of beef (tenderloin, flank steak, ground round)

  • chicken

  • pork

  • tofu

  • veggie burgers

  • fish

*thicker filets like salmon can be cooked directly on the grill, while thinner and flakier fish like tilapia should be cooked in a grilling pan or on foil.

Include Vegetables and Fruits

Some vegetable flavors really shine after being grilled. Great vegetables for grilling are:

  • mushrooms

  • cabbage

  • onions

  • bell peppers

  • asparagus

  • corn

  • cactus

  • peaches

  • pineapples

Include Specific Oils

These oils can be heated to a high temperature without smoking:

  • grapeseed safflower and peanut oil

  • sunflower and canola oil

  • virgin olive and corn oil

Grilling Safety
  • Consider having at least two sets of spatulas, tongs and platters to prevent mixing utensils used for raw meats with cooked meats.

  • Invest in a food thermometer to ensure meat is cooked to the proper temperature.

    145ºF (62.8ºC) & allow to rest for at least 3 minutes
  • Ground Meats
    160ºF (71.1ºC)
  • Ham
    145ºF (60ºC) & allow to rest for at least 3 minutes
  • All Poultry
    165ºF (73.9ºC)
  • Fish and Shellfish
    145ºF (62.8ºC)
Grilling Cooking Methods
  • Direct heat: cooking raw food directly over the heat source to cook. It could be used for burgers, kabobs, chicken, steaks, sausages and vegetables.

  • Indirect heat: works best for foods that need extra cooking time. Place food away from the heat source and close the grill cover. You can also start cooking on direct heat to create a sear, then move it to indirect heat to cook evenly.
