Chef Pablo Recommendation: Antioxidant Rich Recipes!
Normal body functions as well as lifestyle choices such as smoking produce substances called free radicals that harm healthy cells. When healthy cells are damaged they can be vulnerable to certain types of cancers. Antioxidants such as carotenoids (including beta-carotene, lycopene and lutein) and vitamins C and E are thought to help defend healthy cells!
  • Carotenoids – (BetaCarotene, Lycopene and Lutein)

    Sources: red, orange, deep-yellow and some dark-green leafy vegetables
    Example: tomatoes, carrots, spinach, brussels sprouts, sweet
    potatoes, winter squash and broccoli!

  • Vitamin C

    Sources: Citrus Fruits
    Example: oranges, grapefruits, tangerines, strawberries, sweet
    peppers, tomatoes, broccoli and potatoes!

  • Vitamin E

    Example: vegetable oils, salad dressings, margarine, wheat germ,
    whole-grain products, seeds, nuts and peanut butter

Antioxidant-Rich Pumpkin & Carrot Soup

1 lb. peeled pumpkin or other squash
4 oz. coarsely chopped carrots
1 peeled potato
1 coursely chopped onion
2 oz. honey
1 cinnamon stick
4 cloves
1 quart of water
2 cups of almond milk

1. Place all of the ingredients (except for almond milk) in pot and boil
until cooked (approx. 20 min).

2. Remove and discard cloves and

3. Puree other ingredients in blender and add almond
milk as needed until all ingredients are blended.

Antioxidant-Rich Orange Agua Fresca

1 stick cinnamon
4 cloves
1/2 fresh peeled orange quartered
1 teaspoon chopped orange peel
2 cups water

1. Bring to a boil and reduce by half strain and cool.

Agua fresca
2 cups fresh squeezed orange juice
1 cup fresh strawberries
½ cup agave syrup
3 cups water

2. Place all ingredients in blender and mix and add hot tea mix.

Antioxidant-Rich Sorghum Flour Crepes

9 oz. almond milk
3 oz. sorghum flour
2 tbsp flour
Pinch of sea salt

  • Slowly fold flour into almond milk with wire whip.
  • Whip thoroughly add salt and let sit for 15 min
  • Heat nonstick pan to approx. 350 degrees. Wet
    towel with grapeseed oil about 1 teaspoon just enough
    to cure surface of nonstick pan.
  • Take 1 oz. of batter and pour with the end of ladle create a very thin
    pancake or crepe.

Fresh Berry Salsa

6 diced fresh strawberries
1 tbsp blueberries
6 blackberries
1 cup diced fresh pineapple
1 tbsp agave syrup

  • Mix all ingredients together and lightly toss

Spinach and Pomegranate Salad with Orange Vinaigrette

8 oz. fresh cleaned spinach leaves
1 cup fresh pomegranate seeds
½ cup chopped walnuts
1 cup fresh sliced pears


2 oz fresh orange juice
2 oz balsamic vinegar
½ cup grape seed oil
Salt and pepper to taste

  • Place oj and vinegar in blender and fold in oil at medium speed.
  • Add salt and pepper to taste.
  • Mix dressing with salad to your preference.
  • Enjoy and See you at Northgate!
