Sweet Potato Puree with Pineapple

  • 2/3 cup Nestlé® evaporated milk
  • ½ stick butter or margarine
  • 2 lbs cooked sweet potatoes
  • 1 can crushed pineapple, drained, divided
  • 2 tablespoons brown sugar
  • ½ teaspoon ground cinnamon
  • Ground nuts
  • Fresh mint or parsley leaves (optional)


  1. Melt the butter over medium heat in a large pan; set aside. Add the sweet potatoes and crush with a fork or spoon. Add the evaporated milk. Reserving 2 tablespoons of pineapple for decoration, pour the rest over the sweet potato mixture with the sugar and cinnamon. Cook over a low heat, stirring occasionally for 10 minutes or until the liquid evaporates. Serve at room temperature with the pineapple, ground nuts, and mint leaves
