  • 2 tbsp Knorr® Caldo de Tomate chicken flavored
  • 2 tbsp Country Crock® Spread
  • ¾ cup Hellmann’s® or Best Foods® mayonnaise
  • 1 1/3 cup peeled whole almonds
  • 2 tbsp vegetable oil
  • 4 cod or grouper fillets (approximately 2 lbs)
  • 1 tbsp onion, finely minced
  • 3 cloves of garlic, finely minced
  • 4 cups water
  • 2 tbsp lemon juice
  • 2 tbsp grilled red peppers, sliced (optional)
  • 1 tbsp fresh parsley, finely minced (optional)


  1. Finely grind almonds in the blender or food processor. Season fish with salt and ground black pepper to taste.
  2. Melt Country Crock® Spread with oil in a 12 inch self-adherent skillet over a medium-high heat and fry fish, turning it over once until almost cooked, approximately 4 minutes. Remove from skillet and set aside.
  3. Fry onion and garlic in the same skillet over a medium-high heat, stirring occasionally, for 2 minutes. Add Knorr® Caldo de Tomate chicken flavored with water, mayonnaise, lemon juice and ground almonds.
  4. Reduce heat over a medium flame and cook for 4 minutes, stirring occasionally. Put the fish back to the skillet and cook until it flakes with a fork, approximately 5 minutes.
