  • Whole pork loin, 1/4 lb. per person
  • One can of cola beverage for each 2 lbs. of meat
  • 1 cup orange and/or lemon juice for each 2 lbs. of meat
  • Salt and pepper to taste
  • Optional: canned chipotle chiles in their juice (can be put in blender with citrus juice)


  1. Place pork loin in large oven-proof pot with lid. Pour liquids over the meat and season with salt and pepper. Cook in oven, basting with juices every 1/2 hour until meat is cooked throughout - it should easily shred with a fork.

Serving suggestions:

  • While pork loin is cooking, prepare these side dishes:
  • Baked or mashed potatoes (yams or sweet potatoes can also be used)
  • Steamed vegetables such as broccoli, zucchini, cauliflower, etc.
  • Mixed salad: lettuce, cabbage, cilantro, tomato, cucumber, avocado
