Quinoa with Roasted Corn

Quinoa with Roasted Corn

Ingredients:

  • 3 cups cooked quinoa
  • (approx. 1 cup uncooked quinoa)
  • 1 ear of corn, fire roasted
  • ½ bunch of cilantro, finely diced
  • 1 Serrano peppers (optional)
  • ½ tomato, finely diced
  • 1 tbsp grapeseed oil
  • ¼ red onion, chopped fine
  • ½ tsp salt
  • Juice from ½ lemon

Instructions:

  1. Cook rice according to package instruc-tions. Once cooked, set aside & leave cov-ered.
  2. Finely chop and mix all other ingredients as if you were going to make pico de gal-lo.
  3. Fluff the quinoa with a fork and mix in the pico de gallo.
