  • 2 lbs Northgate® pineapple flavored tamale masa
  • 30 tamale husks, softened
  • 2 lbs fresh pineapple, chopped
  • ½ lb sugar
  • 3 oz grated coconut
  • 3 oz raisins


  1. Cook the pineapple in water with the sugar until it softens. Drain. Mix in a bowl with the coconut and the raisins.
  2. Place the husks, pineapple masa and pineapple mix on a working surface. Spread ¼” to ½” of masa across the corn husk. Add a spoonful of pineapple mix in the center of the masa.
