  • 1 Bunch of Kale, washed and dried
  • 3 tablespoons of Olive Oil
  • 2 Cloves of Garlic, Mashed
  • 1 tablespoon of Lemon Juice
  • 3 Oz. of Cotija Cheese, crumbled


  1. Remove stems from kale, stack and roll cigar-style, then thinly slice. In a small jar shake garlic, lemon juice and olive oil to make dressing. Pour over kale and toss well. Add cheese, salt and pepper. Let rest 15 minutes before resting.
