  • 1 lb. Longaniza Jimenez
  • 2 lbs. Oaxaca cheese
  • 1 cup Anaheim peppers, seeded and sliced into
  • 1/2-inch strips
  • 1 cup white onions, sliced into
  • 1/2-inch strips
  • 3 tbsp. chopped fresh cilantro
  • 1 bag Northgate Tortilla Chips


  1. In a skillet, cook the Longaniza Jimenez until almost cooked.
  2. Add the fresh Anaheim peppers and onions until tender.
  3. Remove pan from heat.
  4. In a medium casserole, stir the Oaxaca cheese with Longaniza Jimenez, peppers and onions.
  5. Bake uncovered about 10 minutes or until cheese is melted and slightly golden brown on top.
  6. Sprinkle with fresh chopped cilantro and serve with Northgate Tortilla Chips.
