1 medium sweet potato, peeled and cut into bite sized pieces
2 tablespoons lard (you could use coconut oil)
1 small avocado or 1/2 a medium avocado, sliced
optional lime wedges on the side for squeezing
In a medium skillet heat 1 tablespoon of lard over medium heat and add sweet potato and cook stirring occasionally to prevent burning for 5-8 minutes or until nicely browned and easily pierced with a fork.
In either a medium sized pan heat remaining 1 tablespoon of lard over medium heat and crack two eggs when the pan is hot and place them separated in the pan being carefully not to break the yolk.
Let fry for 1-2 minutes then place a lid on top and lower heat to low and cook for 2-4 more minutes or until the white is fully cooked but the yolk isn’t solidified.
Warm the cauliflower tortillas if they aren’t already warm in the skillet you cooked the sweet potato in or in the microwave.
Place the 1 fried egg on top each tortilla, top with pan fried sweet potato then chopped onion then chopped cilantro and finish with sliced avocado.
Serve these with a little wedge of lime to squeeze a little bit over each topped tortilla.
