- 1 eggplant
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 2 tbsp. Pompeian Extra Virgin Olive Oil
- 2 tbsp. McCormick® Grill Mates® Montreal Chicken Seasoning
- Cut vegetables into 1-inch cubes.
- Toss vegetables with oil in large bowl. Sprinkle with Seasoning; toss to coat well.
- Place vegetables in grill basket, grill rack or thread onto skewers.
- Grill over medium heat for 12 to 15 minutes or until vegetables are tender, turning occasionally.
- Garnish with parsley or cilantro, if desired.
