  • 1 eggplant
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 zucchini
  • 2 tbsp. Pompeian Extra Virgin Olive Oil
  • 2 tbsp. McCormick® Grill Mates® Montreal Chicken Seasoning


  1. Cut vegetables into 1-inch cubes.
  2. Toss vegetables with oil in large bowl. Sprinkle with Seasoning; toss to coat well.
  3. Place vegetables in grill basket, grill rack or thread onto skewers.
  4. Grill over medium heat for 12 to 15 minutes or until vegetables are tender, turning occasionally.
  5. Garnish with parsley or cilantro, if desired.
