  • 5 Swai or Tilapia fillets
  • 2 Persian cucumbers, finely diced
  • 1 medium orange, peeled and finely diced
  • ½ cup jícama, finely diced
  • 1 Serrano pepper, finely diced (optional)
  • ¼ bunch of mint, finely diced (can use cilantro instead of mint)
  • ½ tsp salt
  • Juice from ½ lemon
  • 1 tsp grapeseed oil
  • Paprika and pepper


  1. Preheat oven to 350ºF.
  2. Prepare the relish with the cucumbers, orange, jicama, Serrano chile, cilantro, lemon and salt. Set aside.
  3. Sprinkle pepper and paprika on each fillet.
  4. Add ¼ cup of water to the baking pan.
  5. Bake for 15 minutes at 350ºF.
  6. Serve the fish immediately and top with the relish.
