Ingredients:

  • 2 lbs of pork meat cut into small pieces
  • ¼ lb of pork lard
  • 5 Pasilla Chiles deveined and cooked
  • 5 Guajillo Chiles deveined and cooked
  • 6 garlic cloves
  • 1 tsp of dry oregano
  • ½ tsp of cumin powder
  • ½ cup of vinegar
  • 3 cups of wáter (enough to cover the meat)
  • Salt and Pepper to taste

Preparation:

  1. At low heat, in a pot put the pork meat to cook with enough wáter to cover it and add the lard, cumin, salt, and pepper to taste.
  2. Maintain the pot closed and let the meat cook completely. An indication that the meat is cooked is when it starts to brown lightly
  3. Blend the rest of the ingredients, guajillo chile, pasilla chile, oregano and garlic. Add the paste to the meat and continue to cook until the meat is completely tender. Once the meat is completely cooked, remove it from the heat and shred the meat.
  4. Accompany this récipe with warm Northgate tortillas, refried beans and a delicious guacamole.
