Chicken Salad

Ingredients:

  • 3 cups of Cooked Chicken
  • 1/4 cup peeled and cubed jicama
  • 1/4 cup pimientos chopped
  • 2 medium avocados cubed
  • 1/2 cup of Gonzalez Sour Cream
  • 1/4 Cup of Mayonnaise
  • 2 tbls minced cilantro
  • 5 romaine lettuce leaves
  • 2 tbls lime juice
  • 1/2 cup green onions chopped

Preparation:

  1. In a large bowl combine the chicken, avocados, jicama and pimientos.
  2. In a small bowl combine the sour cream, mayonnaise, cilantro and lime juice.
  3. Season with salt and pepper to taste.
  4. Drizzle over chicken mixture, toss to coat.
  5. Top with onions.
  6. Serve on lettuce leaves.
