Catfish Soup with Chipotle

Ingredients:

  • 2 lbs catfish medallions or pieces
  • 1 ancho chilli , minced
  • 4 tomatoes, diced
  • 3 cloves of garlic, finely minced
  • ½ onion, finely minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 pinch thyme
  • 1 pinch marjoram
  • 1 pinch oregano
  • Olive oil

Preparation:

  1. Sautee onion and garlic in a skillet with some olive oil, add minced tomato and cook for 5 minutes. Remove and reserve.
  2. Cook the potatoes and carrots in a saucepan with boiling water with salt, add slightly fried tomato and spices, add fish and Ancho chili. Cook for 15 minutes over a medium heat, season and serve.
