Achiote and Orange Chicken Salad

For the salad

  • 4 cups baby spinach
  • 1 white onion sliced in strips
  • 4 oz grated Cotija cheese
  • 1 cup of fried, thinly sliced corn tortillas
  • 2 oranges
  • ½ cup olive oil
  • Salt and pepper to taste

For the chicken

  • 4 Foster Farms® Chicken Breasts
  • ½ of an achiote bar
  • 4 oranges (the juice)
  • Salt and pepper to taste


  1. In a blender mix the achiote with the orange juice, salt, and pepper.
  2. Cover the chicken in this mixture and leave to marinate for one hour.
  3. Take to the grill and cook for 8 to 10 minutes on each side or until desired doneness.
  4. Place the spinach inside a salad bowl with the onion, the sections of one of the oranges, the tortilla strips, and the cheese.
  5. In a bowl, squeeze the remaining orange and mix the juice with the olive oil, salt, and pepper. You may add some grated orange peel.
  6. Pour dressing on the salad with the sliced chicken on top.
